Authentic, because the one who inspired them is none other than his mother. “As a kid, I was canning with my mother on Sundays. She is a good cook, it is with her that I learned everything. And that stuck with me…” For Lionel Ravoux, Pots Potes is like a return to basics. And this for many reasons. Because he reconnects with his childhood memories on the one hand, but also with his native region, Puy-en-Velay and Haute-Loire.

Consume differently and sustainably with Pots Potes

After a career in the agri-food trade, notably at Borde and Sabarot, Lionel Ravoux embarked on the Hari&Co adventure in Lyon, a start-up which campaigns for a reasoned diet and an agricultural sector. virtuous. He leaves it in 2019 after 4 years of service for a new challenge that he wishes in the same eco-responsible vein: Pots Potes.

In full confinement, Lionel Ravoux then embarked on making preserves, imagining recipes… “And if I made it an activity? " No sooner said than done. Pots Potes was born in June 2021 and launched its production the following fall, with the promotion of products from the department. Pork from Haute-Loire, Fin Gras from Mézenc, Noire du Velay, vegetables from Vorey, fresh mushrooms from Saint-Alyre-d'Arlanc, lentils, pearl barley and spelt from at Sabarot… “I make the locals work! he insists.


Working in a short circuit is the watchword of Lionel Ravoux who for the past year has been selling his canned meals of local and natural origin (no preservatives, no additives, no flavor enhancers) directly on the stalls. from the markets of Puy-en-Velay and Yssingeaux, aboard his vintage courier who does not go unnoticed. “This summer, I would like to add the markets of Costaros, Coucouron, as well as some night markets. »

On the menu, risottos with porcini mushrooms, chanterelle mushrooms, beef bourguignon, Japanese-style pig's trotters, Auvergne hotpot, veloutés, pot-au-feu, Basque chicken, mashed potatoes with porcini mushrooms … Dishes with exotic accents, but also local specialties that Lionel Ravoux takes pleasure in cooking to create original preserves, to the delight of our taste buds.

A solution for lodges and accommodation without on-site catering, or for business meals

So many small dishes, or should I say, small "pots" that Lionel Ravoux would like to offer in the lodges, accommodation or campsites in the territory. “And why not in the hotel room service industry? Sometimes customers arrive late, the restaurant is closed… Les Pots Potes are the solution! » Especially since sterilized, they can be kept for 4 years at room temperature.

Ditto for local businesses that want to offer their employees healthy, gourmet and local lunches. “I set up a main course/dessert formula (with crumble, egg cream or Ardèche chestnut brioche and blueberry coulis, editor’s note)”. In his workshop in Rosières, Lionel Ravoux cannot do without the invaluable help of his work-study student Olympe, but also that of Mauricette from the neighboring ESAT (Establishment and service of help through work). “She comes to help us once a week. But the goal is to run the workshop 3 or even 4 times a week. Which little by little, would allow Mauricette to access employment in the ordinary working environment, excluding ESAT. »
